What Can I Do?
The best way that we can help alleviate animal suffering on
a daily basis is to go vegan. That means to find alternatives
for animal products, which means not eating meat, eggs, milk,
cheese, or honey. The recipes below will help you to still eat
the same way, but just replace some of your normal brands for
the healthier vegan product. And remember, eating a vegan diet
is also the best way to help the environment too! |

Vegan Recipes
Vegan Chocolate Chip Cookies
2 cups whole wheat pastry flour
1/4 cup quick-cooking oats
1 t baking soda
1/2 t baking powder
1/2 cup vegan granulated sweetener
1 cup applesauce
1 1/2 t Ener-G egg replacer, dissolved in 2 T water
1 1/2 T light vegetable oil
1 1/2 cups vegan semi-sweet chocolate chips
1/2 to 3/4 cup raisins (optional)
Preheat the oven to 350 degrees. Combine the flour, oats, baking soda, baking powder, and sweetener in a mixing bowl and stir together. Make a well in the center of the dry ingredients and add the applesauce, dissolved egg replacer, and oil. Stir together until the wet and dry ingredients are thoroughly combined. Stir in the chocolate chips and raisins, if desired. Drop the batter onto lightly oiled baking sheets in slightly rounded tablespoonfuls. Bake for 10 minutes, or until the bottoms are just lightly browned. Let stand for a minute or two, & then carefully remove with a spatula to plates to cool. Makes 3 dozen.
Tofu Gravy
1 cup Soft tofu
1 1/2 cups Water
1/2 tsp Garlic Powder
1 cup Cooked Garbanzo Beans
1 tsp Onion Powder
1 tbsp Bernard Jenson's Seasoning (gravy mix, not soup mix)
Put in saucepan and heat to just below boiling.
Dissolve 2 tbsp tapioca flour or cornstarch in 1/4 cup water, and add to other ingredients to thicken.
Add more dissolved tapioca or cornstarch if too thin.
Bernard Jenson's Seasoning - Available at health food stores or Weimar Institute (1-800-525-9192.)
Country Corn Muffins
Blend until VERY smooth and creamy:
2 cups Soaked Soybeans (soak in 3" of water overnight and then drain)
1 tsp Salt
2-3 tbsp maple syrup
2 cups water
Pour into a bowl and add:
3/4 cup Cornmeal (regular, not self-rising)
Stir and mix well, then spoon into sprayed muffin tins, or into a 9-inch sprayed iron pan or casserole dish.
Bake at 350 for 35-45 minutes, depending on what baking dish is used.
Muffins should be brown on the sides and sound hollow to the tap when done. Do not over bake!
Fifth Avenue Carob Cream Pie
Blend until VERY smooth:
1 cup water
1/2 cup raw cashews
1 tsp Vanilla
1/2 tsp Salt
ADD and continue to blend:
1 cup Pitted Dates softened in 1 cup water (add both)
3 tbsp Cornstarch
3 tbsp Carob powder (chocolate substitute, in health food stores)
1 tbsp Postum or Roma, optional (found in coffee section of store)
Pour in saucepan and thicken, stirring constantly
Pour thickened mixture into baked Granola Crunch Pie crust
Chill and Serve
Granola Crunch Pie Crust
1 1/2 Cup Granola (vegan granola recipe below)
2 tbsp vegetable oil (optional)
Pinch salt
Grind granola in a blender.
Put granola in a bowl and add all ingredients.
Add 2-4 tbsp water.
Mix with a fork, adding a little more water if necessary.
Press into pie plate with fingers.
Bake at 350° for 10-15 minutes, or until firm and crusty.
Serving Suggestion - Make any pie better with vegan Dreamy Cream
Whip (see recipe below).
Dreamy Cream Whip
Blend until VERY smooth and creamy:
2 cups Soft tofu
1/2 cup canola oil or raw cashews
2 tbsp vanilla
2/3 cup maple syrup
Pinch salt
Add SMALL amounts of water if necessary while blending to keep mixture moving in blender.
Chill and serve.
Serving Suggestion - This creamy treat is great on pies, fruit, and used as layers between a variety of berries.
Granola
7 cups oatmeal
1 cup wheat germ
1 cup coconut (finely ground)
1 1/2 tsp salt
1 cup slivered almonds or chopped pecans, etc.
1/4 to 1/2 cup oil
1/2 cup warm water
1/4 to 1/2 cup maple syrup
MIX above dry ingredients together in large pan.
ADD liquid to dry ingredients.
MIX thoroughly.
PUT in large shallow pans.
BAKE at 225 degrees F. until golden brown and crisp (about 2 to 2 1/2 hours) or
bake slowly at 170 degrees F. for 6-7 hours.
SERVE with fruit, if desired. Fresh peaches, strawberries, or fruit puree are
especially delicious.
Just Like Cheddar Cheese
1/2 cup Sesame Tahini * (not sesame butter)
1/4 cup Lemon juice
4 tbsp Nutritional yeast flakes * (not powder)
4 oz. Pimento
1 1/2 tsp Salt
1 tsp Onion Powder
1/2 tsp Garlic Powder
3 tbsp Unflavored Emes gelatin (or Agar Agar flakes), dissolved in 1/2 cup cold water
5-6 stuffed olives
Bring an additional 1/2 cup water to a boil.
Place all ingredients, including dissolved Emes (or Agar Agar flakes) AND the 1/2 cup
boiling water, into a blender.
Blend thoroughly, until mixture is smooth and creamy.
Pour into mold and let it set. (A small bread pan works well!)
When thoroughly chilled and set, turn out onto a dish. Slices beautifully and melts too!
Emes Gelatin - A kosher gelatin with no meat or dairy products.
Available at health food stores
Agar Agar can be used in any recipe in place of Emes Gelatin
with this in mind:
1) if using Agar Agar powder, use half the amount that is specified
for Emes Gelatin.
2) if using Agar Agar flakes, use the same amount that is specified
for Emes Gelatin.
-- Agar Agar is a vegan gelatin made from seaweed and is available
at health food stores, Fresh Fields, or The Weimar Institute (1-800-525-9192.)
* Can be found in health food stores.
Chicken-Like Seasoning
1/2 cup salt
1/2 cup nutritional yeast flakes (not powder)
2 tbsp Seasoned Eatings (see below)
1 tsp Turmeric
2 tsp Garlic Powder
1 tbsp Onion Powder
1/2 tsp Marjoram
1/2 tsp Sage or Savory
1 tbsp Parsley
Blend in blender.
Store in cool place.
Seasoned Eatings:
1/3 cup Salt
1/3 cup Nutritional Yeast Flakes
1/4 tsp Oregano
1/4 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Basil
1/4 tsp Dill Weed
1/8 tsp Savory
2 tbsp Parsley
Soy Nut Trail Mix
2 cups roasted, salted soy nuts
1 cup candy-coated soy nuts
1 cup oat-ring cereal
2 cups pretzel sticks
1 cup raisins
1 cup dried cranberries
1/2 cup dried cherries
Mix all ingredients in large bowl or container. Keep tightly closed in container or zippered plastic bag.
While shopping or out running errands - Bringing along your
own snacks such as this recipe (or your favorite raw or dried fruits,
nuts) can help eliminate unwanted calories and fat and also save
you money! Soy Nut Trail Mix is high in protein and low in fat.
Healthy snacks can help keep you energized and prevent over-eating
later in the day.
